Trần Thị Lan opened with a borrowed stock pot and a menu of nine dishes. Regulars learned to order by number, and number 9, the house special with five cuts of beef, is still the bowl we sell most.
Her son Minh runs the kitchen now, and the recipe hasn’t moved: beef bones and oxtail simmered for fourteen hours with charred onion, ginger, star anise and cinnamon, skimmed by hand until it runs clear.
Over thirty years we added bún, broken rice, bánh mì and a proper vegetarian broth. The numbers stayed. Tell us yours.
