The little north
“My chef in Lyon called Edmonton “petit nord”. I liked it so much I painted it over the door.”

Mireille Gauthier grew up a few blocks from La Cité francophone and learned to bake in Lyon, in a kitchen where the day began at three in the morning. Her chef there called Edmonton petit nord, the little north, and the name came home with her.
She opened on 91 Street in 2019 with one deck oven, one sheeter and a sack of Alberta flour. The croissants still take three days: a day for the dough, a day for the butter, a morning to rise.
Everything in the case was made here this morning, in the room behind the counter. Come early on Saturdays, or call ahead and we’ll set a few aside.
