Ma and Ba Leung opened Blue Crane on 97 Street in 1987, with six round tables, two carts and the dumpling recipes Ma learned in her aunt’s teahouse in Hong Kong.
For thirty-four years the carts rolled out at 9:30 sharp. In 2021 their daughter Winnie took over the dining room. She kept every one of Ma’s dumplings and added the thing she had always wanted: a real tea list, poured from proper clay pots.
Ma still comes in at seven to pleat the har gow. Get here early and you can watch her through the kitchen window.
Dim sum means “touch the heart.” Every steamer that leaves our kitchen should.

The har gow skins are so thin you can read the menu through them. Ma still checks every steamer.
Sunday dim sum with three generations at one round table. The servers know my dad’s order better than I do.
Finally, a tea list worth reading. Guk po and a plate of egg tarts is my new Saturday.
Wonton noodle soup on a minus-thirty night. Nothing in Edmonton comes close.
